Career Highlights

- Attended Beaconhills College from 1986 to 1988 (Years 10-12)
- Moved to Sydney in 1989 to undertake an art course
- At the age of 22, in 1993, he left the art course and opened a restaurant, ‘bills’, in Darlinghurst in Sydney
- ‘His life was changed forever when an influential American journalist ordered a plate of scrambled eggs – the ‘Egg Master of Sydney’ was born and he has been sought out ever since by visiting Hollywood stars’ (1994)
- Opened a second ‘bills’ in the nearby suburb of Surry Hills in Sydney in 1996
- Both restaurants have been hugely successfully and are established as favourite destinations with both locals and tourists alike.
- ‘bills Woollahra’ opened in 2005
- His five cookbooks to date have sold over 700,000 copies – he is now one of Australia’s leading food writers. His books have also become international best sellers
- His debut television series was launched in 2004 on the ‘Lifestyle’ channel, with a second series in 2006
